Tip #1 - Depending on your setup, and how many racks you're cooking, the ribs should take anywhere from 4 to 5 hours to finish. But don't go by time - take a toothpick and probe the meat in different places. When the toothpick can be pushed in and then pulled out without any resistance, the ribs are done. - Chris Marks
