I can vouch for the quantities on turkeys and butts. I have done 3 20# turkeys with room for one more and 10 8# butts with room for more on my 30-24 (Marshall). I did not cook the butts and the turkeys at the same time, mind you.

A couple of questions on the butts:
- Do you use all of the racks (even the very top one)?
- If not what racks do you use.
- Do you have any problems with the butts being too tall for even the lower racks?
- If so, do you let the butts touch the rack above?Sorry, I have tried to cook a lot of butts a few times and this is the issue I have had.
Thanks - Mathew

Mathew,
Cooking on The Rodeo, I remove the very top rack and the 3rd from top. Otherwise the racks are too close. Doing this I can still get 16 butts in one cook. You can try to jam them in, but you will definitely not be happy with the results...mangled meat, torn-up bark, difficulty in sliding racks...just not worth it to me.
Just my .02.

Thanks Jim. Actually also had this issue once when we tried to cook all of our product at a comp on my Marshall. Two butts, two briskets, 6 slabs and 16 pieces of chicken made for some interesting logistics including tearing the bark up on a butt. We have brought two cookers ever since.

I've got a 42/24 (Rodeo) and I welded some more tads between the top and 3rd racks and between the 3rd and 2nd racks. I use the smaller top rack and 2 other racks. I put one on the bottom and the others on the new tabs. I can get 10 packer briskets in and not be crowded. I bet I can get 20 pok butts on, but haven't tried.

Man, I bet those additional tabs are great! I've thought about having those added, but since I don't weld, it's only been thought about...probably should find someone to do that for me. Great Idea! Thanks for the validation!

Chris, I don't think your #'s are right for the Trail Boss. I did a cook last summer for RAGBRAI. I was doing shoulder and brisket. There is no way you can get 60 briskets on in one load. That would mean putting 20 briskets on each rack. My brisket averaged 15# each. That would put 300# of meat on each rack. I think they would be packed together too tight to allow for good air and heat circulation. Also, the heat required to bring that amount of mass up to temp would be incredible. If this is possible, could you show me a picture of how this was accomplished.
For the record, I have the older model of the Trail Boss that has four racks that are 60"x28" and one top rack that is 60"x18". The current model has 3 rack 60"x28".
